It is very rare to find purple carrots where we are. I always grab them whenever I see them. I have made Purple Carrot Bread with instant yeast before and it turned out to be very nice. At this time, I don't want to run any risk going out for spinach. So, I just used whatever we had. The green colour will stand out more if more spinach were used. Unfortunately, I only had this much Spinach. Characteristic of this bread: The texture is especially soft, fluffy and moist on the first day and second day it becomes slightly dry but, still soft. I am back to my soft sourdough bread baking. I have tried various types of soft sourdough bread and have not tried using wholemeal flour in my sourdough bread yet. Characteristic of this bread: The texture is especially soft, fluffy and moist on the first day and it lasts very well for 2 - 3 days. I think it is because of Yudane dough added.
